Apricot Clafoutis

Such a simple but delicious dessert. French dessert of fruits encased in a sweet batter. Quick and easy to make, works well with fresh cream. Can replace apricots for any fruit of choice.



Ingredients

  • 100ml milk
  • 100ml single cream
  • 115g Co-operative Fairtrade caster sugar
  • 12 apricots
  • 3 eggs
  • 60g Co-operative plain flour

Method

  1. Pre-heat the oven to 180C/160C fan/Gas 4. Remove the stones from the apricots, cut into wedges and place in a greased baking dish.
  2. In a separate bowl, mix the flour, and 100g of the sugar. Gradually stir in the eggs, milk and cream, and whisk together thoroughly.
  3. Pour the batter over the fruit. Bake in the oven for 45-50 minutes or until golden brown.
  4. Sprinkle over the remaining sugar, and serve with cream.
