Apricot Clafoutis

Such a simple but delicious dessert. French dessert of fruits encased in a sweet batter. Quick and easy to make, works well with fresh cream. Can replace apricots for any fruit of choice.
Ingredients
- 100ml milk
- 100ml single cream
- 115g Co-operative Fairtrade caster sugar
- 12 apricots
- 3 eggs
- 60g Co-operative plain flour
Method
- Pre-heat the oven to 180C/160C fan/Gas 4. Remove the stones from the apricots, cut into wedges and place in a greased baking dish.
- In a separate bowl, mix the flour, and 100g of the sugar. Gradually stir in the eggs, milk and cream, and whisk together thoroughly.
- Pour the batter over the fruit. Bake in the oven for 45-50 minutes or until golden brown.
- Sprinkle over the remaining sugar, and serve with cream.
