Easy Christmas Pudding

Ingredients
- 2 x 411g jars of Co-operative luxury mincemeat
- Grated zest of 2 clementines
- 2 tbsp brandy
- 50g self-raising flour
- 1 tsp mixed spice
- 50g white breadcrumbs
- 1 Co-operative Free Range egg
- Icing sugar
Method
- Put the mincemeat into a large bowl whilst stirring in the grated orange zest and brandy with a spoon. Sieve the flour and spice together whilst mixing into the mincemeat mixture with the breadcrumbs and then stir in the beaten egg.
- Scoop the above mixture into a greased 900ml pudding bowl. Cover the top with a sheet of greaseproof paper, followed by a circle of foil, use string to tie around the top of the bowl securing the parcel. Create handles by looping over the bowl and securing at the other side.
- Place the pudding bowl onto a saucer into a large saucepan and pour in the boiling water until it comes halfway up the side of the pudding bowl. Cover and steam for 3 hours, top up the water often. Alternatively, cover the bowl loosely with greaseproof paper and microwave on full power for 8-10 minutes.
