Easy Christmas Pudding

Ingredients

  • 2 x 411g jars of Co-operative luxury mincemeat
  • Grated zest of 2 clementines
  • 2 tbsp brandy
  • 50g self-raising flour
  • 1 tsp mixed spice
  • 50g white breadcrumbs
  • 1 Co-operative Free Range egg
  • Icing sugar

Method

  1. Put the mincemeat into a large bowl whilst stirring in the grated orange zest and brandy with a spoon. Sieve the flour and spice together whilst mixing into the mincemeat mixture with the breadcrumbs and then stir in the beaten egg.
  2. Scoop the above mixture into a greased 900ml pudding bowl. Cover the top with a sheet of greaseproof paper, followed by a circle of foil, use string to tie around the top of the bowl securing the parcel. Create handles by looping over the bowl and securing at the other side.
  3. Place the pudding bowl onto a saucer into a large saucepan and pour in the boiling water until it comes halfway up the side of the pudding bowl. Cover and steam for 3 hours, top up the water often. Alternatively, cover the bowl loosely with greaseproof paper and microwave on full power for 8-10 minutes.
