Golden Syrup Chocolate Fondant Puddings

Ingredients

  • 2tsp cocoa powder
  • 75g unsalted butter, plus extra for greasing
  • 150g dark chocolate (70% cocoa)
  • 125g Lyle’s Golden Syrup
  • 3 large free range eggs
  • 1 tsp vanilla extract
  • 50g plain flour

Method

  1. Preheat oven to 200C/180Cfan/gas6. Butter 6 individual pudding basin and dust with the cocoa powder.
  2. Break chocolate into bowl and melt over a pan of simmering water.
  3. Beat butter and Lyle’s golden syrup until smooth and creamy, gradually add eggs then vanilla extract, when smooth, fold in flour, mix well.
  4. Add melted chocolate and mix again.
  5. Divide between the basins, place on a baking sheet and bake 10 minutes. Serve straight away.
