Lemon Posset

One of the easiest desserts to make. Can be made ahead of time, and therefore ideal for dinner parties. Delicious mix of sharp and sweet, all combined in a creamy base.
Ingredients
- 600ml double cream
- 140g Co-operative Fairtrade caster sugar
- 2 large lemons
Method
- In a pan, bring the cream and sugar to a gentle simmer for 5 minutes.
- Remove from the heat, and add the juice and zest of the lemons, and stir well to combine.
- Divide the mixture equally between 6 ramekins, and set in the fridge for 3 hours, until firm.
