Panna Cotta With Raspberry Coulis

A classic Italian dessert. Consists of a set, sweetened vanilla cream, and topped with a sharp raspberry coulis. An ideal dessert for entertaining.
Ingredients
- Dr Oetker gelatin leaves x 3
- 250ml milk
- 250ml double cream
- Dr Oetker vanilla seeds (tsp)
- 25g Co-operative Fairtrade caster sugar
- For the coulis:
- 150g Co-operative Fairtrade caster sugar
- 150ml water
- 325g raspberries
Method
- Soak the gelatin leaves in cold water until softened.
- In a separate pan, add the sugar, milk, cream, and vanilla into a pan, and gently bring to a simmer.
- Squeeze all the water from the gelatin, and add to the pan. Immediately take off the heat, and stir continuously until the gelatin has dissolved.
- Pour the mixture into four ramekins, and leave to cool, in the fridge, for an hour or until set.
- Meanwhile, place the raspberries, water and sugar into a pan and bring to a simmer.
- Stir until the sugar dissolves and the fruit softens.
- Puree the mixture with a hand blender, and set aside to cool.
- To serve, turn the panna cotta out of the ramekins onto a plate and drizzle with the coulis.
