Passion Fruit And Champagne Syllabub

A sophisticated twist to the traditional syllabub. Simple to create, but very elegant, making this dessert perfect for entertaining. Creamy, fruity and sweet, makes it an ideal summer pudding.
Ingredients
- 100ml Champagne or sparkling wine
- 100g strawberries, sliced
- 250g mascarpone
- 4 tbsp icing sugar
- 4 Co-operative passion fruit, pulp only
- 200ml double cream
- 2 tbsp Whitworths flaked almonds
- 4 Martini glasses
Method
- At the base of each glass, layer a few of the strawberry slices.
- In a bowl, add the mascarpone and icing sugar. Pour in three quarters of the Champagne or sparkling wine along with the passion fruit pulp. Mix together thoroughly.
- Whip the cream, until peaks form. Fold the cream through the passion fruit mix, along with the last of the Champagne.
- Spoon the mixture into the glasses, and top with a final layer of strawberries.
