Vanilla and Lemon Baked Pears

Ingredients
- 4 ripe medium pears, peeled and cored from the base
- 1 lemon zest and juice
- 1tbsp caster sugar
- 4tbsp white wine
- 1 vanilla pod, split
Method
- Firstly tear four pieces of baking parchment big enough to wrap around a pear.
- Soak the paper in water and squeeze dry. Sitting the paper in a bowl, place 1 pear into the centre of each piece of and pull up around the edge.
- In a small saucepan add the lemon zest and juice, whitewine, sugar and vanilla, bring to the boil and pour over the pears.
- Wrap each pear up into a parcel, securing with a bit of string and bake for 30-35 minutes on a tray at 180°C /gas mark 4 until soft.
- Leave to cool slightly before serving with whipped cream if you so desire!
- One serving equals one of your five a day.
