Vanilla and Lemon Baked Pears

Ingredients

  • 4 ripe medium pears, peeled and cored from the base
  • 1 lemon zest and juice
  • 1tbsp caster sugar
  • 4tbsp white wine
  • 1 vanilla pod, split

Method

  1. Firstly tear four pieces of baking parchment big enough to wrap around a pear.
  2. Soak the paper in water and squeeze dry. Sitting the paper in a bowl, place 1 pear into the centre of each piece of and pull up around the edge.
  3. In a small saucepan add the lemon zest and juice, whitewine, sugar and vanilla, bring to the boil and pour over the pears.
  4. Wrap each pear up into a parcel, securing with a bit of string and bake for 30-35 minutes on a tray at 180°C /gas mark 4 until soft.
  5. Leave to cool slightly before serving with whipped cream if you so desire!
  6. One serving equals one of your five a day.
