Chicken Stuffed with Herby Mascarpone and Wrapped in Prosciutto

Thick, creamy, Italian soft cheese with a high fat content and mild, creamy flavour. Versatile, and can be used in sweet or savoury dishes.
Ingredients
- 6 tbsp Mascarpone
- 2 tbsp rosemary, chopped
- 2 tsp chopped thyme
- 2 cloves garlic, peeled and chopped
- 4 chicken breasts (skin on)
- 8 Prosciutto slices
- juice half a lemon
- olive oil
Method
- Pre heat the oven to 200C/180C fan/gas 6.
- In a bowl combine the Mascarpone, rosemary, thyme and lemon with a little salt and pepper.
- Lift the skin of the chicken to form a pocket. Scoop a liberal amount of the Mascarpone under the skin.
- Wrap 2 slices of Prosciutto ham around each of the breasts tightly, to enclose the filling.
- In a roasting dish, put a splash of olive oil. Place the chicken in the dish, and roast for around 20 minutes, until cooked through, moist with a crisp outer layer.
- Pour the chicken juices from the pan over the meat and serve.
