Chinese Chicken Stir Fry

Ingredients
- About 500g The Co-operative Healthier Choice Elmwood British skinless chicken breast fillets
- 2tsp sesame oil
- 1tbsp olive or vegetable oil
- 2 cloves garlic, peeled and finely chopped
- 4-5cm piece fresh root ginger, peeled and finely chopped
- Half small head broccoli, cut into florets (or other green veg)
- 500g The Co-operative vegetable stir fry
- 2 x 275g packs The Co-operative free range egg noodles
- Soy sauce, to taste
- To serve, handful each of fresh coriander leaves and cashew nuts
Method
- Thinly slice the chicken breast fillets. Heat the oils in a wok or frying pan over a high heat, then add the chicken and stir fry until golden and almost cooked through. Add the garlic, ginger and broccoli pieces and fry for a few minutes.
- Add the stir fry vegetables and cook for a minute or two, then add the noodles and soy sauce and fry for another couple of minutes. Scatter over the coriander and cashew nuts.
