British turkey cuts, minced. Selected cuts of ground turkey. Low in fat, and therefore can be a healthy alternative to beef or pork. Carries flavours and seasonings very well.

Ingredients

  • For the meatballs:
  • 450g minced turkey
  • small handful of parsley, finely chopped
  • 3 sprigs of thyme, leaves removed
  • 3 garlic cloves, peeled and finely chopped
  • handful of breadcrumbs
  • 1 tbsp dried mixed herbs
  • 2 tbsp tomato ketchup
  • For the sauce:
  • olive oil
  • 1 white onion, chopped finely
  • 2 cloves of garlic, peeled and chopped
  • salt and pepper (to taste)
  • 1 red chilli, deseeded and chopped
  • 1 tbsp dried mixed herbs
  • 1 tins of chopped tomatoes
  • 1 tsp sugar
  • half a glass red wine

Method

  1. Firstly, tip the turkey mince into a bowl with all the other ingredients for the meatballs. Mix everything together well with your hands.
  2. Roll the flavoured mince into an even number of balls. Put on a plate, cover with cling film and leave in the fridge whilst you prepare the sauce.
  3. In a large saucepan, heat a glug of olive oil. Throw in the onions and garlic and let them sweat until soft.
  4. Add the rest of the ingredients and let the sauce simmer on a low heat.
  5. In a separate frying pan heat a dash of olive oil. Take the meatballs out of the fridge, and fry them until golden brown.
  6. Remove them from the frying pan and immediately transfer them to the pan with the tomato sauce. Stir them through the sauce, and let everything simmer together for 20 minutes.
  7. Serve with pasta of your choice, and crusty bread.
