Honey and Lemon Chicken Drumsticks

100% British drumsticks. The lower portion of the chicken leg, between the knee joint and the hock. Fun, finger food, great for barbequing, and roasting. Tender, moist meat.
Ingredients
- 3 lemons, juice of 2, the 3rd cut into segments
- 50g butter
- 4 tbsp clear honey
- leaves from 5 sprigs of rosemary
- 2 cloves of garlic, peeled and chopped
- 8 Co-operative chicken drumsticks
- 500g waxy potatoes, skin on and sliced
- salt and pepper
Method
- Preheat the oven to 200C/fan 180C/gas 6.
- Heat a pan on the hob, and add the butter, lemon juice, honey, rosemary and garlic, until the butter melts and everything is mixed together. Add a pinch of salt and a grind of pepper.
- Put the chicken into a roasting tin, along with the potatoes. Pour over the lemony buttery mixture, and nestle the lemon wedges around the chicken pieces.
- Roast for 1 hour, until everything is golden, and the chicken is cooked through.
