Kath Eaton's - Cottage With a Leaky Roof Pie

Ingredients
- 8 mushrooms, chopped
- 1 medium onion, chopped
- 1 stick of celery, chopped
- 1 Knorr Beef Stock Cube
- 1 tbsp gravy granules
- ½ pot of crème fresh
- 2 medium leeks, chopped
- 1.5 lbs of Maris Piper Potatoes
- 6 ounces of pre-grated cheddar cheese
- 500g of beef mince meat
Method
- Peel, slice and boil the potatoes and leeks together on a low heat for 5-10 minutes. Whilst they are cooking, sauté the chopped onion and celery, when soft add mushrooms. Cook for 2 minutes, and then add the mincemeat and cook for further 10 minutes.
- Place the stock cube in boiling water; add the gravy granules and stir until thick, next add meat mixture into the gravy mixture.
- With a slotted spoon, fill a deep dish with the finished meat mixture
- Mash together the potatoes and leeks, add crème fraiche and spoon on top of the meat mixture, score the top with a fork.
- Sprinkle grated cheese over the top of the mash and grill until golden brown.
