Lamb and Apricot Tagine

Ingredients

  • 1 onion, diced
  • 1 clove garlic, crushed
  • 5ml (1tsp) sunflower oil
  • 2 x 160g packs (approx.) The Co-operative lamb steak
  • 15ml (1tbsp) plain flour
  • 10ml (2tsp) ground coriander
  • 2.5-5ml (0.5-1tsp) ground chilli powder
  • 1 lamb stock cube
  • 150g (5.5oz) frozen mixed vegetables
  • 6 dried apricots, halved

Method

  1. Place the onion, garlic and oil in a pan. Cook until softened. Cube the lamb (removing any fat) and toss in the flour. Add to the pan with the coriander and chilli. Cook until browned on all sides.
  2. Crumble the stock cube into 300ml (0.5pt) water. Add to the pan and simmer for 20 minutes. Add the vegetables and apricots, and continue to cook for 10-15 minutes.

This recipe has one or more red traffic lights.  It's fine to eat occasionally or as a treat.
