Masala Lamb Chops with Jeweled Salad

British lamb chops. Meat from the lambs' loin. High fat content making it a juicy and tender cut. Quick and easy to cook, can be served with a variety of sauces and accompaniments.



Ingredients

  • 1 tbsp rapeseed oil
  • 2 tbsp curry paste
  • 4 lamb chops
  • half a cucumber, finely diced
  • 12 radishes, sliced
  • 12 cherry tomatoes, quartered
  • 1 red onion, finely sliced
  • large handful mint, roughly chopped (save some for garnish)
  • large handful coriander, roughly chopped (save some for garnish)
  • 1 tsp ground cumin
  • juice of 1 lemon

Method

  1. Pre heat the grill. Rub the chops in the oil and curry paste, and season with salt and pepper.
  2. Grill the chops for about 4 minutes each side (for medium), and allow to rest.
  3. Whilst resting, put the fresh ingredients into a bowl and give everything a good mix up. Season the salad, and plate up.
  4. Serve with the chops on top of the salad, and a sprinkle of fresh herbs to finish.
