Poached, Spiced Pears with Chocolate Sauce

Ingredients

  • 750g golden caster sugar
  • 4 pears, peeled
  • 1 cinnamon stick
  • 5 cloves 1 star anise
  • thumb sized piece of ginger, peeled and chopped
  • For the sauce:
  • 200g dark chocolate
  • 150ml double cream
  • 150ml whole milk

Method

  1. In a large pan (which can house all of the pears), tip in the sugar, cinnamon, cloves, star anise and ginger.
  2. Half fill the pan with water and bring to the boil. Once boiled, simmer for a further 10 minutes before dropping in the pears.
  3. Poach the pears for 30 minutes or until soft and tender. Set aside to cool.

For the sauce:

  1. Place the cream and milk in a pan, and bring to the boil.
  2. Once boiled, take off the heat and add the chocolate in small pieces.
  3. Stir until all the chocolate is melted, and the mixture smooth.
  4. Drain the pears from the syrup and dip them in the chocolate sauce, until covered.
  5. Leave to cool so the chocolate hardens slightly, and serve.
