Pork and Fennel Burgers with Fennel Slaw

An aromatic European plant, which is part of the parsley family, with feathery leaves known as fronds. It has an aniseed flavour, and can be eaten both raw and cooked.



Ingredients

  • 8 pork sausages (Cumberland or Lincolnshire work well)
  • 1 tsp fennel seeds pinch of dried chilli flakes 3 tbsp mayonnaise
  • zest and juice of 1 lemon
  • 1 bulb fennel, sliced
  • half a onion, thinly sliced
  • 4 bread rolls
  • clove of garlic, chopped
  • 1 tbsp of tomato ketchup

Method

  1. Heat the oven to 200C/180 fan/gas.
  2. Take the sausage meat out of their casings.
  3. Mix together with the chilli, garlic, ketchup and half of the lemon zest.
  4. Make burger patty shapes out of the sausage meat, and place onto a greased tray. Cook for 30 minutes until the outside becomes golden.
  5. While the burgers cook, add the remaining zest and juice of the lemon, the onion and the fennel to the mayonnaise and stir thoroughly.
  6. Place one patty in each of the rolls, and top with the fennel slaw. Serve with salad or chips.
