Prawn, Fennel, and Avocado Cocktail

Ingredients
- Firstly, make the dressing by mixing the olive oil together with the citrus juice. Add a pinch of salt and pepper.
- For the salad, toss the rest of the ingredients, including the prawns, in a bowl without the watercress.
- Add half of the dressing to the mixture, and mix together.
- Put a handful of the watercress leaves at the base of martini glasses or small bowls.
- Add a handful of the prawn mixture onto ach bed of watercress. Drizzle with the remaining dressing, and serve.
