Quick Pilaf

Ingredients
- 200g basmati rice
- 1tbsp oil
- 4 spring onions (trimmed and finely sliced) or 1 red onion (peeled and finely chopped)
- 1 pepper (red, orange or yellow), deseeded and chopped
- 100g chorizo or bacon, cut into small pieces
- fine green beans, trimmed and halved
- zest of 1 lemon
- handful of nuts (about 50g) e.g. cashews (roughly chopped and toasted)
- handful of chopped fresh herbs (e.g. coriander, parsley) - optional
Method
- Put the rice into a pan with double the volume of water (400ml), cover and bring to a gentle simmer for 14 minutes. Take off the heat and leave to stand for 10 minutes.
- Meanwhile, in a large pan, heat the oil and soften the onion, pepper and chorizo or bacon for 10 minutes.
- Steam the peas or beans for a few minutes until just cooked, then add to the chorizo mixture with the rice and lemon zest.
- Toast the nuts in a pan until golden and mix everything together.
- Sprinkle with herbs and serve.
