Radish, Potato and Halloumi Salad

  • 450g new potatoes
  • 200g spinach
  • 150g radishes
  • 250g halloumi
  • Chives
  • 1 lemon
  • 1 tbsp olive oil
  • Black pepper
  • Plain flour
  • 2 chillies


  1. Cut the potatoes in to halves and boil until tender.
  2. Arrange the potatoes on four plates with spinach, sliced radishes and a few chopped chives.
  3. Dip the sliced halloumi in plain flour and fry for a few minutes on each side, add to the salad.
  4. Whisk 1 tbsp of olive oil with the juice and zest of the lemon, two chopped chillies and black pepper then drizzle over.
