Spinach Burgers
Serves: 8 burgers
Preparation: 20 minutes + 30 minutes chill
Cooking Time: 10 minutes
Ingredients
- 1 tbsp olive oil, plus a little extra for frying
- 2 onions, peeled and finely chopped
- 225g bag baby leaf spinach, finely chopped
- 250g breadcrumbs (about 5 slices of bread)
- 150g The Co-operative Healthier Choice mature cheese, grated
- Freshly ground black pepper
- 2 free range eggs
- 2-3 tbsp seasoned plain flour
- Serve in bread rolls with salad and either ketchup or mango chutney
Method
- Heat the oil and gently fry the onion for 5 minutes and put into a bowl.
- Add the spinach to the onions with the breadcrumbs (homemade or bought), grated cheese and freshly ground black pepper.
- Add the eggs and bind it all together with your hands.
- Flour your hands and divide mixture into 8 burgers.
- Put the flour into a bowl and season with freshly ground black pepper.
- Dip the burgers in the flour to coat.
- Chill for 15-30 minutes until firm.
- Heat the oil in a frying pan and fry the burgers for 3-4 minutes on each side or until golden.
