Spinach Burgers

Serves: 8 burgers
Preparation: 20 minutes + 30 minutes chill
Cooking Time: 10 minutes



Ingredients

  • 1 tbsp olive oil, plus a little extra for frying
  • 2 onions, peeled and finely chopped
  • 225g bag baby leaf spinach, finely chopped
  • 250g breadcrumbs (about 5 slices of bread)
  • 150g The Co-operative Healthier Choice mature cheese, grated
  • Freshly ground black pepper
  • 2 free range eggs
  • 2-3 tbsp seasoned plain flour
  • Serve in bread rolls with salad and either ketchup or mango chutney

Method

  1. Heat the oil and gently fry the onion for 5 minutes and put into a bowl.
  2. Add the spinach to the onions with the breadcrumbs (homemade or bought), grated cheese and freshly ground black pepper.
  3. Add the eggs and bind it all together with your hands.
  4. Flour your hands and divide mixture into 8 burgers.
  5. Put the flour into a bowl and season with freshly ground black pepper.
  6. Dip the burgers in the flour to coat.
  7. Chill for 15-30 minutes until firm.
  8. Heat the oil in a frying pan and fry the burgers for 3-4 minutes on each side or until golden.
