Sweet and Sour Pork Noodle Stir fry

Ingredients
- 15ml (1 tbsp) Co-operative vegetable oil
- 250g (9oz) pork tenderloin, cut into thin strips
- 1/2 bunch spring onions, sliced
- 1 large carrot, cut into thin strips
- 1 red pepper, cut into diamonds
- 1 227g can pineapple slices, cut into 2.5cm (1in) pieces
- 1 100g sachet of sweet and sour stir fry sauce
- 2 150g packs of straight to wok medium egg noodles
Method
- Heat the wok and add the oil. Add the pork and cook until lightly browned.
- Add the spring onions, carrot and red pepper, then stir fry for about 3-4 minutes.
- Add the pineapple and Sweet and Sour Stir Fry Sauce with 1 tbsp of water, then stir fry for a further 2-3 minutes.
- Separate the Straight to Wok Medium Egg Noodles and drop them into the wok.
- Toss the ingredients together, cook for a further 2 minutes and ensure the pork is fully cooked before serving.
