Sweet and Sour Pork Noodle Stir fry

Ingredients

  • 15ml (1 tbsp) Co-operative vegetable oil
  • 250g (9oz) pork tenderloin, cut into thin strips
  • 1/2 bunch spring onions, sliced
  • 1 large carrot, cut into thin strips
  • 1 red pepper, cut into diamonds
  • 1 227g can pineapple slices, cut into 2.5cm (1in) pieces
  • 1 100g sachet of sweet and sour stir fry sauce
  • 2 150g packs of straight to wok medium egg noodles

Method

  1. Heat the wok and add the oil. Add the pork and cook until lightly browned.
  2. Add the spring onions, carrot and red pepper, then stir fry for about 3-4 minutes.
  3. Add the pineapple and Sweet and Sour Stir Fry Sauce with 1 tbsp of water, then stir fry for a further 2-3 minutes.
  4. Separate the Straight to Wok Medium Egg Noodles and drop them into the wok.
  5. Toss the ingredients together, cook for a further 2 minutes and ensure the pork is fully cooked before serving.
