The Perfect Steak

Ingredients

  • 30g butter
  • 1 clove of garlic (optional)
  • 1 handful of finely chopped mixed fresh herbs (eg tarragon, coriander, parsley, chives)
  • Freshly ground black pepper
  • 4 sirloin steaks (or any steak of your choice – about 140-200g)
  • A little sunflower oil

Method

  1. Make the herb butter by beating 30g butter until smooth and creamy. Stir in 1 clove of garlic (optional), crushed, and a handful of finely chopped mixed fresh herbs (eg tarragon, coriander, parsley, chives). Season with freshly ground black pepper. Roll the butter into a sausage shape, wrap in clingfilm and chill until you are ready to cook the steak.
  2. Heat a ridged grill pan until hot. Brush 4 sirloin steaks (or any steak of your choice – about 140-200g each, depending on the person) with a little sunflower oil. Season to taste. Place the steaks on the grill pan. For a medium sirloin steak cook for 3 minutes, then turn and cook for 2½ minutes. For a rare sirloin steak cook for 2 minutes, then turn and cook for 1½ minutes. For well done, cook for 4 minutes, then turn and cook for 3½ minutes.
  3. Remove steaks from the heat and leave them to rest for a few minutes.
  4. Cut the butter into 4 circles and place on top of the steaks. Serve with oven chips and peas.
