Pea Soup

Ingredients
- 1 onion; roughly chopped
- 1.1 litres hot vegetable stock made from 3 stock cubes
- 365g The Co-operative British King Edward potaotes or large white potatoes; peeled and cut into chunks
- 225g The Co-operative Irresistible British garden frozen peas
Method

Put the onion and 150ml hot vegetable stock into a large saucepan. Bring to the boil andsimmer for 6-8 mins, stirring occasionally until the onion is soft and almost all the stock absorbed.

Add the potato and 950ml stock, cover and simmer for 8 mins until potato is tender. Stir in the peas and simmer for another 3-4 mins. Purée in a blender.
- To serve, pour soup back into saucepan and heat gently.
