Red Peppers Stuffed with King Prawns

Ingredients

  • 4 The Co-operative red peppers
  • 10ml (2tsp) olive oil
  • 1 small onion
  • 5ml (1tsp) The Co-operative plain flour
  • 1 x 284ml pot The Co-operative single cream
  • 30ml (2tbsp) The Co-operative white wine
  • 200g (7oz) The Co-operative Irresistible Jumbo king prawns
  • 200g (7oz) The Co-operative fresh spinach
  • 25g (1oz) The Co-operative Irresistible Cheddar

Method

  1. Preheat oven to 200°C, 400°F, gas mark 6. Halve the peppers lengthways, removing the core and seeds but leaving on the stalk.
     
  2. Place on a baking sheet and cook for 20 minutes until softened.
     
  3. Finely chop onion. Heat olive oil in a saucepan, add onion and soften.
     
  4. Stir in the flour. Gradually add the cream and wine, stirring, and cook for 2 minutes.
     
  5. Add the prawns, spinach and grated cheese.
     
  6. Cook for a few minutes allowing the spinach to wilt gently. Spoon into the pepper shells and serve immediately.

This recipe has one or more red traffic lights, it's fine to eat occasionally or as a treat.
