Flourless Chocolate Cake

A rich, moist decadent chocolate cake. Intense flavour, yet not overly sweet.
Ingredients
- 120g dark chocolate
- 120g butter (plus extra for greasing)
- 150g Co-operative Fairtrade caster sugar
- 50g cocoa powder
- 3 eggs, beaten
- 1 tsp Dr Oetker vanilla extract
Method
- Pre heat the oven to 170C/150C fan/gas 3. Grease a round cake tin with butter, and dust with some of the cocoa powder so it sticks to the butter.
- Over a pan of simmering water, melt the chocolate and butter together. When smooth, take off the heat and stir in the sugar, cocoa powder, eggs and vanilla.
- Pour the mix into the cake tin. Bake in the oven for 30 minutes, until a crust forms.
- Set aside to cool for 10 minutes, this will allow the cake to firm up.
- After resting, tip onto a wire rack and cool for a further 30 minutes.
- Serve with fresh cream.
