Grilled Salmon

Ingredients

  • 4 salmon fillets
  • 1 lemon or lime
  • 2tbsp olive oil
  • Serve with salad and fresh crusty bread or green beans

Method

  1. In a large bowl mix together the zest and juice of 1 lime or lemon and 2 tbsp olive oil.
  2. Add 4 salmon fillets and move around in the bowl so that the fish is covered.
  3. Leave to marinate for an hour.
  4. Turn the grill to a high heat, place the fish on a baking tray and put under the grill for 5-7 minutes, depending on how thick the fish is, or until the skin is crisp and the flesh just cooked.
  5. Serve with salad and fresh crusty bread or green beans.
